Thousands of years ago the ancients of China declared
the three necessities of life to be clothing, food and
shelter. Of these three food is by far the most important.
While shelter and clothing modify only our external
environment, food enters into intimate relation with the
physiological processes of the body. Ordinary prudence
suffices to judge the adequacy of shelter and clothing, but
neither instinct nor common sense is a reliable guide in the
choice of food.
To a large extent the diet of a people is determined by
what the land produces and this, in turn, is dependent on
the character of the soil and the climatic conditions. In
ancient times when the population was small, and economic
pressure non-existent, people produced within certain limits
what they liked from the land. They could, for instance,
choose between.a rice field and a vegetable garden or
between a fruit orchard and a pasture for grazing animals.
With the tremendous increase in population and economic
